Chicken And Plum Chutney Sandwiches

MORE chicken?! Yessir. Had the idea for these earlier today, decided to whip it out, as it were, for dinner. They were banging. Or are banging, I still have a lot of the fixins' left. Here's the gist:

  • 2 tablespoons olive oil
  • 1 tablespoon Onion Powder
  • 4 red plums, (about 1 pound), halved, pitted, and cut into 1/2-inch pieces
  • 1/3 cup packed light-brown sugar
  • 2 tablespoons cider vinegar
  • 3/4 teaspoon curry powder
  • 1/4 teaspoon ground ginger
  • 1 big ass breast of leftover crock pot chicken
  • Red pepper flakes
  • Monterey Jack Cheese
  • Wheat Bread
  • Fresh Spinach
To skillet, add remaining 1 tablespoon oil, onion powder, and red pepper flakes; get it hot and fragrant, about 3 minutes for me. Increase heat to medium-high; add plums, sugar, vinegar, curry powder, ginger, and 1/4 cup water. Bring to a boil; reduce to a simmer, and cook until plums are softened and liquid is slightly syrupy, about 8 minutes. Then toast the bread, slap some cheese on it, put some of the filling in there, top it all with spinach. We ate them with cantaloupe. Ring the bell!


Crockety-Pot-Pot Chicken!

More chicken? Never did a chicken in a crockpot. Honestly even while doing it I was thinking do people do this? Is this okay? Am I gonna get my door smashed in ala neighborhood drug bust? The answer of course was yes. But the offending officers were very polite. Not to my door but to me. This is basically what I did.

  • 1 (4 pound) whole chicken
  • 1/2 cup chicken broth
  • 1/3 cup soy sauce
  • 1/3 cup olive oil
  • 1/4 cup honey (i used blackberry honey)
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons balsamic vinegar
  • 1 lemon, juice
  • 4 cloves minced garlic
  • Sesame seeds.
Then I put all that into the crockpot, with the halves from the lemon I juiced, and half a white onion scattered about. Set it on medium, let it go for about 6 hours. Took it out, carved the thing, ate it with a baked potato. BOOM!

Slow Cooked Chicken Tacos

Here are some pretty good slow cooked chicken tacos I made last night.

3 chicken breasts
1 can diced tomatoes
1 small can tomato paste
1 chopped jalapeno
1 can chopped Serrano peppers
1 tsp cumin
1 Tbsp brown sugar

corn tortillas
chopped lettuce
chopped onions
chopped cilantro
salsa

refried beans
cheese

I put the chicken into a pot that was just big enough for them each to have their own spot. I poured in the canned tomatoes and peppers and the sugar and cumin. It came most of the way up the side of the chicken breasts. I put a lid on this and heated it on low for 3 hours. I had just enough heat for it so be right on the verge of boiling the whole time. You will know they are done when they fall apart really easily. I pulled them out of the sauce they cooked in, ripped it all up, and then put them in a bowl with whatever was still chunky from the sauce. I then poured some of the sauce onto the chicken just to the point where it coated everything and added a little moisture.

I then heated the corn tortillas on a cast iron skillet for about 10 seconds on each side. After the meat, I topped it with lettuce, onions, cilantro and salsa. There was a side of beans with cheese as you can see in the picture.

Yankee Pot Roast Sandwiches

Open-faced pot roast sandwiches folks. That's what you're looking at. Plus some corn, and some brussel sprouts, and of course the veggies that cooked with the meat.

-4lb. bone-in chuck roast.
-2 14oz cans of beef broth.
-1 and a half cups grape juice.
-1 bag of baby carrots.
-3 cups chopped celery.
-1 medium onion, chopped.
-4 cloves garlic, minced.
-Flour, for dredging.
-Olive oil
-Cornstarch.
-Good bread.

So you dredge the pot roast in the flour. Then you take that roast and brown it in a pot with the heated olive oil. After its browned you dump in your veggies, and shortly after that you add your grape juice. Hey, about after that you add that beef broth you've been saving. Whatchoo waitin for anyway, christmas? So then you take all that, and you put it in the damn crock pot alright? That okay with you big shot? I'm sorry, I got carried away just now. We cool?

Okay then you let the thing go for like, I don't know, 6 hours. Get it in there and just walk away. That's right, you just walk away, got a problem with that? What? What are you supposed to do for 6 hours? Geez, I don't know, take a nap or something. Christ, what am I your day planner? Near the end of the cook time you can do your veggies. Weren't nothin special about these veggies, just frozen little guys boiled in some water. You want something fancy you cook it your own damn self. Hey, after your meat is good and cooked, you pull it right outta there and you let it rest. While you were nappin it was doing all the work alright? Give it a break. Hey, then you drain that cooking liquid, and skim all the fat off the top. You take that liquid and you add it to a sauce pan and you add some flour, or maybe a little cornstarch, I don't know what you like, and you stir the thing, and bring it to a boil. Add some salt and pepper while you're at it. When it reaches a boil, you reduce the heat, and you simmer till that baby gets nice and thick. There's your gravy. Then you take some meat, put it on your bread, we used these nice big rolls but you can use whatever crap you like, and then you hit it with the gravy. Load up some veggies, and wham, you got yourself some supper. Ring the bell.
