Chicken And Plum Chutney Sandwiches

MORE chicken?! Yessir. Had the idea for these earlier today, decided to whip it out, as it were, for dinner. They were banging. Or are banging, I still have a lot of the fixins' left. Here's the gist:

  • 2 tablespoons olive oil
  • 1 tablespoon Onion Powder
  • 4 red plums, (about 1 pound), halved, pitted, and cut into 1/2-inch pieces
  • 1/3 cup packed light-brown sugar
  • 2 tablespoons cider vinegar
  • 3/4 teaspoon curry powder
  • 1/4 teaspoon ground ginger
  • 1 big ass breast of leftover crock pot chicken
  • Red pepper flakes
  • Monterey Jack Cheese
  • Wheat Bread
  • Fresh Spinach
To skillet, add remaining 1 tablespoon oil, onion powder, and red pepper flakes; get it hot and fragrant, about 3 minutes for me. Increase heat to medium-high; add plums, sugar, vinegar, curry powder, ginger, and 1/4 cup water. Bring to a boil; reduce to a simmer, and cook until plums are softened and liquid is slightly syrupy, about 8 minutes. Then toast the bread, slap some cheese on it, put some of the filling in there, top it all with spinach. We ate them with cantaloupe. Ring the bell!
