Blackened Chili-Rubbed Pork Chops

Well look at that, a recipe from Jeremy that's not chicken! So, I can't take credit for this, not really. The technique, and the recipe came from the foodwishes blog, which is super duper great by the way. Mike turned me onto it. I did alter his recipe a little bit, but mostly just by not using as much chili powder as Amber is a wimp. But also, I used bone-in chops, not boneless, as thats what we had around.

Ingredients:
2 boneless center-cut pork chops (about 7oz each, about 1 1/2 inch thick)
1 1/2 tbl vegetable oil
salt to taste
Spice Rub:
1/2 tsp black pepper
1/2 tsp all spice
2 tsp paprika
2 tsp ancho chili powder
cayenne to taste (optional)


Really good recipe, not spicy at all. I can't imagine it would be even with the same amount of chili powder. I served them with some simple fried potatoes, but I absolutely want to try the shitake, sweet corn, and arugula saute. Holy crap does that look good. Ring the bell!

Chicken And Plum Chutney Sandwiches

MORE chicken?! Yessir. Had the idea for these earlier today, decided to whip it out, as it were, for dinner. They were banging. Or are banging, I still have a lot of the fixins' left. Here's the gist:

  • 2 tablespoons olive oil
  • 1 tablespoon Onion Powder
  • 4 red plums, (about 1 pound), halved, pitted, and cut into 1/2-inch pieces
  • 1/3 cup packed light-brown sugar
  • 2 tablespoons cider vinegar
  • 3/4 teaspoon curry powder
  • 1/4 teaspoon ground ginger
  • 1 big ass breast of leftover crock pot chicken
  • Red pepper flakes
  • Monterey Jack Cheese
  • Wheat Bread
  • Fresh Spinach
To skillet, add remaining 1 tablespoon oil, onion powder, and red pepper flakes; get it hot and fragrant, about 3 minutes for me. Increase heat to medium-high; add plums, sugar, vinegar, curry powder, ginger, and 1/4 cup water. Bring to a boil; reduce to a simmer, and cook until plums are softened and liquid is slightly syrupy, about 8 minutes. Then toast the bread, slap some cheese on it, put some of the filling in there, top it all with spinach. We ate them with cantaloupe. Ring the bell!


Crockety-Pot-Pot Chicken!

More chicken? Never did a chicken in a crockpot. Honestly even while doing it I was thinking do people do this? Is this okay? Am I gonna get my door smashed in ala neighborhood drug bust? The answer of course was yes. But the offending officers were very polite. Not to my door but to me. This is basically what I did.

  • 1 (4 pound) whole chicken
  • 1/2 cup chicken broth
  • 1/3 cup soy sauce
  • 1/3 cup olive oil
  • 1/4 cup honey (i used blackberry honey)
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons balsamic vinegar
  • 1 lemon, juice
  • 4 cloves minced garlic
  • Sesame seeds.
Then I put all that into the crockpot, with the halves from the lemon I juiced, and half a white onion scattered about. Set it on medium, let it go for about 6 hours. Took it out, carved the thing, ate it with a baked potato. BOOM!
